Matcha Chia Pudding

Matcha Chia Pudding is a great way to elevate positive vibrations when starting the day. It is a delicious combination of nutrition and caffeine that is sure to help you get through that Post Thanksgiving eating extravaganza feels. Imagine caffeine, protein, vitamin C, antioxidants and deliciousness…all in one!

Compared to other Green teas, Matcha is significantly higher in antioxidants and chlorophyll and packs a powerful caffeine punch. It is also rich in Vitamin C, potassium, and amino acids, including L-Theanine, which promotes relaxation and alertness and reduces anxiety. Chia provides calcium, protein and healthy fats. The pudding is super quick and easy to make and it is a perfectly nourishing (also vegan and gluten free), on-the-go breakfast or a mid-day snack.  I love making it with coconut milk, but feel free to use any nut milk of your choice.  I used some fresh strawberries, kiwi and mangoes for the topping, feel free to play around with the toppings as you desire.

Matcha Chia Pudding

Ingredients
2 Cups Coconut Milk
1 Teaspoon Maple Syrup or Raw Honey (to taste)
1 Teaspoon Vanilla Extract
1 Teaspoon Matcha Powder
3 Tablespoons Chia Seeds
3 Tablespoons Fresh Berries
Optional Toppings: Toasted Coconut, Hemp Hearts, Cacao Nibs

Instructions

  1. In a blender,  add the milk, honey/maple syrup, vanilla, matcha powder and blend till the mixture is smooth.
  2. Divide chia seeds into 3-4 small mason jars or into one big jar or bowl. Pour the matcha mixture on chia seeds and stir vigorously . Cover the jar/bowl and set aside for at-least 20 minutes or overnight in the fridge.
  3. Top the mixture with fresh berries or desired toppings and serve right away.
