Oven Roasted Crispy Chickpeas

It’s finally Friday…. yay!!
Today’s post is about  an easy to make and nutritious snack. I’m pretty sure that just like me, you also get the urge to snack later in the afternoon. If your body is telling you that you’re hungry, you should not ignore it. Instead, you gotta fill it with the right food that will leave your body feeling better, not bloated. Even though it is very tempting to make a trip down the hallway to the nearest vending machine and grab the most conveniently available snack, it is not doing any good to your body. I believe that a huge part of making healthy decisions is the ability to plan ahead.
The crispy oven roasted chickpeas are a wonderful make ahead snack and can be stored in an air tight jar (that is if you can resist them).  You can season them with any spice combination of choice or they are also delicious with a gentle seasoning of sea-salt and black pepper. I seasoned them with a mix of Sumac, Za’atar and paprika. They are perfect for munching on their own or adding to soups and salads for some extra crunch.

Crispy Chicpea

Ingredients
1 15-oz Container of Chickpeas
1 Tablespoon Parsley, chopped
2 Teaspoons Olive Oil
1/4 Teaspoon Paprika
1 Teaspoon Za’atar
1 Teaspoon Sumac
Sea Salt and Pepper to taste

Process

  1. Preheat the oven to 450 F and line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas gently in a colander. Shake off the excess water and place in a medium bowl.  Use a paper towel to pat them dry.
  3. Add olive oil, sea-salt, pepper, za’atar, sumac and parsley to the chickpeas and toss everything together, making sure that the chickpeas are uniformly coated.
  4. Spread the chickpeas onto the baking sheet in a single layer and roast until crisp, about 25-30 minutes and stirring every 5-7 minutes.
  5. Serve right away. Allow them to cool completely, if storing in a jar.
