Grillled Branzino stuffed with Lemon and Herbs

Grilled Branzino is a great dinner option for busy weeknights or weekends, It is simple, light, and absolutely foolproof.  Branzino – a European sea bass,  is low in fat, high in protein, Omega-3 fatty acids, B vitamins, and the antioxidant selenium. I brushed it with a simple marinade, stuffed with lemon and herbs for some more flavor and grilled on a pan to crispy perfection. I am talking about less than twenty minutes including the preparation and cooking time. Try it and you’ll be surprised by its deliciousness!!

Grilled Branzino
Ingredients
2  Whole Branzino (approx 3/4-pound each), scaled and gutted, heads and tails removed
Salt to Taste
2 Rosemary Sprigs or Thyme Sprigs
1 Teaspoon Cumin
1 Teaspoon Coriander Seeds
1/2 Teaspoon Dried Thyme
1/4 Teaspoon Paprika
2 cloves Garlic, minced
2 Tablespoons Cilantro, chopped
1 lemon — thinly sliced,
1 Tablespoon Lemon Juice
1 Teaspoon Extra-Virgin Olive Oil

Process

  1. Using a mortar and pestle or a grinder, grind: cumin, thyme, salt, coriander seeds and paprika. Add minced garlic and lemon juice to the spice mix and keep aside.
  2. Preheat a non stick grill or a flat pan and coat it with olive oil.
  3. Brush the fish cavities and the outside with the spice marinade. Stuff each cavity with a rosemary or thyme sprig, chopped cilantro and few lemon slices. Use toothpicks to seal the open side of the fish, so that the herbs and lemon doesn’t come out while cooking.
  4. Grill the branzino (keeping the pan covered) on medium high heat, turning once, until browned and crisp, about 3 minutes per side.
  5. Garnish with cilantro and serve warm.
