Fig and Date Smoothie

If you are looking for a refreshing, filling, delicious, nutritious and super quick breakfast or lunch or a mid day snack… this smoothie is for you! Highly customizable, the recipe below makes two servings, feel free to double the recipe. You can also make it the night before and refrigerate it for breakfast next morning.
Ingredients
1 Cup Fresh Ripe Figs
¼ Cup Organic Cashew Milk
¼ Cup Rolled Oats
½ cup Non-Fat Plain Greek Yogurt
3-4 Raw Cashews, sliced
2 Medjool Dates, pit removed
¼ Teaspoon Freshly Grated Ginger
¼ teaspoon ground cinnamon
1 Pinch Sea Salt
1 Teaspoon Toasted Coconut
Process
- Blend all the ingredients in a blender until smooth (around 2 minutes).
- Pour the smoothie in the glass, add honey for additional sweetness if needed.
- Top the smoothie with (more) fresh figs, chia seeds, toasted coconuts and serve right away.
