Ground Chicken and Spinach Stir Fry

Ground Chicken and Spinach Stir Fry is undoubtedly one of the easiest and quickest dish to make. You can substitute ground chicken by ground meat of your choice or you can add tofu to make it  vegetarian. If you don’t have fresh spinach, you can use frozen spinach or bok choy or kale.  This protein and vitamin rich stir fry is good on its own or can be served with some rice or bread to add some carbs.

Spinach Chicken

Ingredients
1 Teaspoon Cooking Oil
1/2 Pound Ground Chicken
1 Small Onion, chopped
2 Cloves Garlic, minced
1 Bunch Organic Spinach, chopped
2 Tablespoons Frozen Green Peas
1 Small Potato, cut in small cubes
1 Teaspoon Tomato Paste or 1 Tomato, chopped
1/4 Teaspoon Cumin Seeds
1/2 Teaspoon Paprika or Red Chili Powder
1/4 Teaspoon Turmeric Powder
1/4 Teaspoon Coriander Powder
Salt to Taste

Process

  1. Heat oil over medium heat in a shallow pan, and add cumin.
  2. Once cumin seeds start spluttering, add onions and cook for a minute. Add garlic and potatoes, cover and cook for two more minutes.
  3. Increase the heat, add ground chicken and saute until browned, approximately one minute.
  4. Reduce the heat to medium and add tomato paste, salt, paprika, turmeric and coriander powder.
  5. Add chopped spinach and frozen peas to the pan and toss well to coat with the spices and chicken. Cover the pan and cook for 8-10 minutes or until the spinach is wilted and the potatoes are cooked.
  6. Taste and adjust the spices if needed. Serve warm.
