Quinoa Amaranth Granola with Chia & Flax Seeds

Making your own granola at home is not just ridiculously simple but is also more nutritious than the pre packed store bought granola. Once you make granola at home, you’ll never buy it again…. I mean, imagine having a toasty, crunchy, delicious granola with specific customization, just the way you like, without any expensive sugary crap. It is loaded with plant proteins from chia seeds, amaranth, flax and hemp hearts and natural sweetness from pure maple syrup, dates and golden raisins and that crunch is UNREAL!! I always make a big batch to use throughout the week in our breakfast cereal, for afternoon snacking at work, post gym snacking and sometimes even for post dinner dessert…. it is just so addictive!

Be prepared to raid the bulk bins at your grocery store to get the ingredients for this audibly crunchy super granola and kick off the holiday season in delicious, healthy style!

Quinoa Granola

Ingredients

3/4 Cup Gluten Free Rolled Oats
1/2 Cup White Quinoa, uncooked
1/4 Cup Amaranth
2 Tablespoons Chia Seeds
2 Tablespoons Flax Seeds
1 Tablespoons Hemp Hearts
2 Tablespoons Pure Maple Syrup
1 Teaspoon Ground Cinnamon
1/2 Cup Almonds, chopped
1/2 Cup Cashews, chopped
2 Tablespoons Coconut Oil, melted
3-4 Dates, pitted and chopped
2 Tablespoon Golden Raisins
2 Tablespoons Unsweetened Coconut
1 Teaspoon Pure Vanilla Extract
Pinch of Salt

Process

  1. Preheat the oven to 300 F. Line a large baking sheet with parchment paper and set aside.
  2. Add coconut oil, maple syrup, vanilla and cinnamon to a bowl and mix well.
  3. In a separate bowl, mix the oats, quinoa, amaranth, chia, flax, hemp,almonds, cashews and salt.
  4. Now add the dry ingredients to the wet ingredients and mix well to ensure everything is evenly coated.
  5. Spread the mixture on the prepared baking sheet and bake for about about 20 minutes.
  6. Add the raisins, chopped dates and coconut to the mixture, give everything a gentle toss and bake for additional 10 mins or until the granola is golden brown.
  7. Let cool before serving or storing in an airtight container.
