Persimmon Pomegranate Spinach Salad
Happy New Year, you guys! Hope you had a wonderful break during the holiday and got to spend time doing what you enjoy the most .
Now that all the holiday eating and partying is over and a new year is upon us, I’m sure we all are looking forward to get back to normal and cleaner eating. One advice that I can give you from personal experience is that if you are looking to make a change in your diet, it has to be the one that you never give up. If you think that a raw food diet, juicing and working out more than two hours a day will make you skinny – you’re right! It probably will, although temporarily. But it will also make you crash and burn. Crash diet and excessive working out each day will last for a brief period, and as soon as you give that up, you will be back to where you started.
Being healthy and fit is a lifestyle and can only be attained by replacing the junk in your diet with wholesome, nutritious and balanced food. Being fit requires a perfect balance of nutrition and training, the nutrition base is very crucial. And remember that healthy can always be delicious, just like this Persimmon Pomegranate and Spinach Salad.
Ingredients
2 Cups Baby Spinach, washed and Drained
1/2 Cup Carrots, diced / chopped
1 Avocado, cut in cubes
1/2 Fuyu Persimmon, sliced
1-2 Tablespoons Pomegranate Arils
Dressing
1 Teaspoon Extra Virgin Olive Oil
1 Small Shallot, finely minced
1 Teaspoon Lemon Juice
Sea Salt and Pepper to Taste
Grated Cheese for Garnish, optional
Process
- In a small bowl, whisk all the ingredients for the dressing until well mixed.
- Add the spinach into a large mixing bowl and add the dressing.
- Now add the chopped avocado and carrots to the bowl and gently toss to evenly coat the mixture.
- Pour the salad mix on to the serving platter and add the chopped persimmons and pomegranate arils. using a spoon mix everything gently.
- Garnish with some more pomegranate and grated cheese.

Oh, my gosh. This is one of the best fruit salads I ve ever had, and one of the best things I ve ever made. So simple too. The mint, lemon, and honey are the only dressing the fruit need.
