Lettuce Wrap with Minced Meat
Lettuce wraps are a healthy alternative to breads or tortillas. These are super quick to prepare, versatile and certainly a crowd pleaser. The meat mixture can be prepared a day or two in advance and can be assembled on lettuce leaves just before serving. Lettuce leaves can be arranged around the outer edge of a large serving platter and meat mixture can be piled in the center or it can be served on individual lettuce leaf. I have used ground chicken but these wraps can also be prepared with ground turkey, lamb or beef. Check this for the vegetarian version of these wraps.
Ingredients
1/2 Pound Ground Chicken
1 Cup Frozen Peas and Carrots
1/2 Cup Shitake Mushrooms, chopped
1 Clove Garlic, minced
1/2 Teaspoon Ginger, minced
1 Shallot, finely chopped
1 Head Lettuce, washed and drained
1 Teaspoon Mirin, optional
1 Teaspoon Organic Soy Sauce
1/2 Teaspoon Hoison Sauce,
1/4 Teaspoon Sesame or Vegetable Oil
1/4 Teaspoon Paprika, optional
Chopped Cilantro, for garnish
Salt to taste
Process
- Heat oil in a skillet over medium high heat. Add minced garlic, ginger and shallots and saute for a minute.
- Add mushrooms, carrots and peas and cook for another minute.
- Add the ground chicken and cook for 5-7 minutes until brown and crumbly.
- Stir hoisin sauce, soy sauce, mirin and paprika into the mixture and cook for a minute. Season with salt.
- Taste and adjust the seasoning if needed. Garnish the mixture with cilantro and serve as desired.
