Lamb Kofta Kabobs
I’m a die-hard fan of kabobs for several reasons. There are multiple varieties to choose from, they cook quickly, and when properly prepared, they’re amazingly tender and juicy. In this case, I seasoned ground lamb with spices and onions, and cooked them on a hot griddle on stove top for a few minutes on each side.
Most of the process is just simple seasoning, forming kabobs and with a little organization, you should be able to pull this whole shebang off in about 30 minutes.
These kabobs are guaranteed to be a crowd-pleaser. I would like to stress that these are an excellent choice for entertaining since they only require about 6 minutes on the stove. You can prepare them in advance and have more free time to socialize and drink or whatever other activities you happen to enjoy at your get-togethers!! 🙂
Ingredients
2 Cloves Garlic, minced
1 Teaspoon Salt
1 Pound Ground Lamb
1 Medium Onion, grated
1 Tablespoon Fresh Parsley, chopped
1 Tablespoon Fresh Mint, chopped
1 Teaspoon Fennel Seeds
2 Teaspoons Coriander Powder
1 Teaspoon Cumin Powder
1/2 Teaspoon Ground Cinnamon
1 Medium Green Chili, finely chopped
1/2 Teaspoon Ginger, grated
1 Teaspoon Oil
1 Egg
Few Teaspoons Breadcrumbs (if needed for binding)
Process
- Wash the lamb using a fine strainer, and place the strainer over a pan to make sure there is no water remaining.
- In a medium bowl, mix all the ingredients (except lamb and oil).
- Add ground lamb to the bowl and mix lightly using a fork. Don’t over mix.
- Form the mixture into small patties (around 2 inches in diameter). If the mixture is falling apart, add some breadcrumbs.
- Grease a cast iron griddle with oil and turn the heat on medium high. (Feel free to use a regular flat pan, if you don’t have a cast iron griddle).
- Cook the kabobs, for approximately 3 minutes on each side for medium well.
- Squeeze lemon juice and serve with rice or dips or salad.
