Goat Cheese and Mushroom Crostini

These crostinis are pretty much the bomb-diggity!! There are unlimited versions of making crostini, this version is one of the simplest and requires only handful of ingredients that may already be present in your pantry. Everything comes together in less than 20 minutes, and the result is an extremely flavorful, savory and herbalicious crostini.
Ingredients
1 Baguette, cut into 1/4 inch thick slices
1 Teaspoon Olive Oil
1 Teaspoon Butter
5 Ounces Fresh Cremini Mushrooms, coarsely chopped (about 1 Cup)
1 Tablespoon Red Wine or Balsamic Vinegar
1 Tablespoon Snipped Fresh Thyme or Rosemary
1/4 Teaspoon Ground Black Pepper
Salt to Taste
3 Tablespoons Fresh Goat Cheese, at room temperature
Process
- Lightly brush each baguette slice with butter. Heat a flat cast iron pan or griddle on medium-high heat and toast the slices for 2-3 minutes on each side. Alternatively, you can bake them in the oven at 425 F for 5 minutes. Turn over and bake for additional 2 to 4 minutes until the slices are lightly brown.
- In a medium saucepan, heat olive oil, add the mushrooms and cook for 1 minute on Medium-High heat. Add the red wine/ balsamic vinegar, thyme/rosemary, salt and black pepper. Cook, for 5 minutes or until most of the liquid is evaporated, stirring frequently.
- Spread goat cheese on each baguette slice, top with a teaspoon of the mushroom mixture. Serve immediately.
