Feta and Chive Scones

The recipe for these savory scones eliminates the need for any specific equipment, all you need is some counter space, a couple of bowls and a fork. You can make the scones in small bite size and serve them as hors d’oeuvres at your next party.  I usually serve them with some spiced butter. They are best served freshly baked, warm from the oven, with butter or homemade preserves.

Feta and Chive Scones

Ingredients
For Butter:
1 Stick (good quality) Unsalted Butter, room temperature
1/4 Teaspoon Paprika
1/2 Teaspoon Mixed Dried Herbs or (desired) Seasoning

For Scones:
3 Cups All-Purpose Flour
1 Tablespoon Sugar
2 1/2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
3/4 Cup (good quality) Unsalted Butter, cold and cut into cubes
1 Egg, beaten
3 Tablespoons Water
3/4 Cup Sour Cream
1/4 Cup Chives, chopped
1/2 Cup Feta Cheese, crumbled
1 Egg (beaten), for egg wash
Paprika for topping

Process

For Butter:

  1. Lightly beat all the ingredients in the bowl using a fork and set aside.

For Scones:

  1. Preheat the oven to 400 F, line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, sift together flour, sugar, baking powder, baking soda, salt, and black pepper.
  3. Add the cubed cold butter to the flour mixture and mix using your fingers until the mixture resembles a coarse meal.
  4. In a small bowl, add the egg, water and sour cream and beat lightly using a fork.
  5. Add the wet ingredients to the flour mixture, mix well to make a shaggy dough. Add chives and feta to the mixture and knead on a clean counter/ workspace till the dough comes together, add a little bit of flour if the mixture is unmanageable.
  6. Roll the dough into a 1-inch thick disc. Cut into 2-inch (or desired size) rounds using a cookie cutter or into squares.
  7. Place the scones on the prepared baking sheet, brush with egg wash, sprinkle with some paprika and bake for 13 -15 minutes or until the top of the scones is golden brown. Serve warm with spiced butter.
