Chocolate Espresso Cookies (Paleo)
I made these cookies last week for our camping trip. The biggest reason to carry these cookies was to satisfy the sugar cravings and not to succumb to the (candy and junk food) temptation usually available at the camp sites. My personal food mantra is to nourish my body with least (or none) processed, least inflammatory and nutritious food. These cookies are a bundle of energy and are SO great dunked into morning coffee. These babies are super decadent for being paleo and as delicious as any other chocolate espresso cookie can be. They are not super sweet, so feel free to add more sugar or maple syrup if you like more sweet. The recipe below yields 14 cookies.
Ingredients
2 Cups Almond Meal
1/4 Teaspoon Baking Soda
1/2 Teaspoon Ground Cinnamon
2 Teaspoons Espresso Powder
1/2 Cup Finely Shredded Unsweetened Coconut
1/3 Cup Coconut Oil, melted
1/4 Pure Maple Syrup, or 1/2 Cup Coconut Sugar
1 Teaspoon Pure Vanilla
1/2 Cup Dark Chocolate Chips or Chopped Dark Chocolate of your choice
A Pinch of Sea Salt
Process
- Line a baking sheet with parchment paper and set aside. Preheat oven to 350 F.
- Combine all ingredients in a medium bowl.
- Take a tablespoon of dough and roll into a ball and flatten it gently with your hands.
- Place the cookies on baking sheet at-least an inch apart from each other and flatten with your hands.
- Bake for 15 minutes, or until the cookies are golden brown.
- Remove the cookies from oven and let them cool completely before serving.
