Chicken Chickpeas Burger
Did you guys have an awesome weekend? I absolutely did! I had a wonderful weekend celebrating a beautiful princess’ first birthday, followed by delicious food, and scrumptious cake from the most famous cakes&cupcakes! For the days when you have already exceeded the carbs consumption of the week, this burger is your savior. Tender, juicy and packed with flavors, the chicken – chickpeas burgers make for a delicious dinner that everyone can enjoy and are a pure comfort on cold days. In addition to their knock-your-socks-off taste, they boast some pretty impressive health benefits as well.
Ingredients
1 Pound Ground Chicken, fat removed
1 Egg
1 Small Onion, grated or finely chopped
3 Tablespoons Canned Chickpeas, drained and rinsed
1/4 Teaspoon Cayenne Pepper or 1 Small Green Chili, finely chopped
Salt and Pepper to taste
1/4 Teaspoon Fennel Seeds
1 Tablespoon Cilantro, finely chopped
1 Teaspoon Olive Oil
Process
- Pulse the chickpeas in a food processor or chopper for few seconds. We are not looking for chickpeas paste.
- Add the onions, spices, cilantro and pulsed chickpeas in a mixing bowl and mix well.
- Add the chicken and egg to the bowl and using a rubber spatula, mix gently. Do not over mix.
- Coat a non stick skillet with olive oil over medium heat and cook a small patty to taste the mixture. Adjust the spices at this point if needed.
- Divide the mixture into 6 equal parts or into your desired portion size. Using your hands, shape each portion into a patty. The mixture will be slightly wet and sticky. If it is completely unmanageable, you can add some breadcrumbs. I didn’t have to add any.
- Cook the patties until golden brown, approximately 4-5 minutes each side. Serve warm.
