Chicken Chili
The cravings for warm and spicy food seem undeniable in this freezing weather… The great news is that I was able to cook this delicious chicken chili in 30 minutes.
First of all, it’s hearty and comforting without being too heavy, and it’s a total breeze to whip up. It won’t be wrong to say that there are infinite variations to brew up the best bowl of chili. With so many flavorful options of beans, meats, spices and vegetables to choose from, the sky is certainly the limit. This recipe is my version of chili, requiring minimal hands on preparation time. It’s warm and spicy heaven. So completely satisfying!!
The epic deliciousness involves ground chicken, which is perfectly seasoned with a blend of cumin, garlic, chili powder, oregano, coriander powder and ginger. I used ground chicken breast and ground thigh in this recipe. Thigh meat adds a little extra flavor, while the breast meat is leaner. Feel free to adjust the quantity of chili powder according to taste.
Ingredients
1 Tablespoon Olive Oil
1 Cup Onion, chopped
1 Jalapeño Pepper, finely chopped
1 Bayleaf
3 Cloves Garlic, minced
1 Pound Ground Chicken
1 Tablespoon Red Chili powder
1 Medium Tomato, chopped
1 Teaspoon Ginger, grated
2 Teaspoons Oregano, dried
1 Teaspoon Cumin Powder
1 Teaspoon Coriander Powder
1/4 Teaspoon Salt
1 (14.5-ounce) Can Kidney Beans (organic), rinsed and drained
1 (14.5-ounce) Can Diced Tomatoes (organic)
2.5 Cups Organic Chicken Broth
1/2 Cup Fresh Cilantro, chopped
Lemon, Sour Cream, Shredded Cheese, Slice Jalapeño, Scallions and Avocado for garnish
Process
- Heat oil in a heavy bottom pan over medium heat, add bayleaf and onions and stir for 3-4 minutes until the onions become translucent.
- Add ginger, garlic and jalapeño and stir for another minute.
- Add chicken and cook for 5 minutes or until chicken is brown, stirring frequently to crumble.
- Stir in all the dry spices (red chili powder, salt, oregano, cumin powder and coriander powder).
- Add tomato, canned tomatoes, kidney beans and chicken broth; and bring the mixture to a boil.
- Reduce heat, cover the pan and simmer for 20 minutes, stirring occasionally.
- Adjust the seasoning if needed, stir in cilantro and serve with desired toppings.
