Cabbage Stir Fry

Winter craving for comfort food is hard to pass up. Fortunately, it is possible to eat comfort foods without piling on the calories. This warm and flavorful cabbage stir fry is both comforting and provides your daily dose of vegetables, all in one dish.
Tip: Start off with less amount of salt since cabbage shrinks while cooking. You can add more salt if needed later (step 4).
Ingredients
1 Small Head Cabbage, around 2 pounds
1 Small Onion, chopped
1 Teaspoon Cooking Oil
1/4 Teaspoon Cumin Seeds
1/4 Teaspoon Turmeric
1/2 Teaspoon Coriander Powder
1/4 Teaspoon Cayenne Pepper or Red Chili Powder
Salt and Lemon Juice to Taste
Cilantro for Garnish
Process
- Cut the cabbage in half and with the cut-side down, slice it as thinly as possible. Discard the core.
- Heat oil in a wok or shallow pan and add cumin seeds. Add onions and salts and mix well. Cover the pan and cook for 30 seconds on medium high heat.
- Now add turmeric, coriander, chili powder and cabbage. Toss everything well and cover the pan. Reduce heat to medium-low and cook for 10-15 minutes, stirring every 5 minutes, until the cabbage is tender.
- Add lemon juice, stir everything together and adjust the spices if needed. Cook on high heat until all the moisture has evaporated (approximately 1-2 minutes).
- Garnish with fresh cilantro and serve hot.
