Arugula Pomegranate Date Salad

Friends, do you need a little excitement in your life dinner? Try this arugula salad with the antioxidants rich pomegranate seeds, dates, walnuts and feta cheese with a light lemon olive oil dressing. The pomegranate not only makes the salad utterly delicious and healthy but also provides an extra crunch along with the walnuts. Make this salad for weeknight dinner or as a starter to brighten up the fall meal on elegant evening of entertaining.

Arugula Salad

Ingredients
1 Bunch Baby Arugula
2 Teaspoons Extra Virgin Olive Oil
1/2 Lemon, juiced
Salt and Pepper to Taste
1/4 Teaspoon Organic Honey
1/4 Cup Pomegranate Seeds
2 Medjool Dates, pitted and chopped
1 Tablespoon Walnuts/Almonds, chopped
2 Teaspoons Feta Cheese, crumbled
1 Teaspoon Grated Parmesan Cheese, optional

Process

  1. In a small bowl, whisk the olive oil with lemon juice, honey and season it with salt and pepper.
  2. In a serving bowl, drizzle the dressing over arugula, add pomegranate, chopped dates and walnuts/almonds and toss until well combined.
  3. Top the salad with crumbled feta cheese and mix gently. Sprinkle the grated parmesan over salad and serve right away.
